PhD Project: Consumer perception and political consumerism about food containing plant-based proteins.

My research focuses on consumer perception and political consumerism regarding food containing plant-based proteins. This project is part of the PAN Sweden initiative on plant-based proteins for health and wellbeing.

The aim is to identify the determinants and drivers of sustainable and healthy food consumption, particularly foods with plant-based proteins, from both individual and group perspectives. To achieve this, the project examines how sensory perception interacts with psychological, social, and biological factors in relation to plant-based foods. Additionally, it explores social networks to understand the role of social reinforcement in promoting sustainable food-related behaviors.

My name is Ansung Kim, and I am from South Korea. I hold an MSc in Human Nutrition and Food-Related Behaviour from the University of Helsinki.

One of the most rewarding aspects of being a PhD student is the opportunity to learn and research from a multidisciplinary perspective.

I believe that my PhD work will help address consumer needs for more sustainable and healthy food consumption and encourage positive changes in their behavior.
